Q: What do I need to know before I buy a Canadiano?

 A: Canadiano is a simple pour over filter made out of wood. It works similar to other pour over filters except you season and develop your Canadiano based on your preferences over time.

To use a Canadiano, you will pour two tablespoons of coffee, add hot water and stir a few times. 2 - 4 minutes later your cup of coffee is ready! After you are done you empty the grinds and rinse the bowl with warm water. 

Q: I'm a devoted pour-over user, how similar is Canadiano going to be to the pour-over I already have? 

 A: Its quite different. Canadiano has a metal filer instead of paper, its made out of wood instead of ceramic, its handcrafted by a passionate team of craftsmen and it looks different from any other pour over you have ever seen. What it does have on common with the standard pour-overs is that it uses gravity to filter hot water through coffee grinds. 

 Q: How should I select my first Canadiano? 

 A: Any of the standard editions; Walnut, Cherry & White Oak are perfect for starters. Cherry is best with light & medium roasts, while we recommend dark roast beans with Walnut & White Oak.

Q: How long does it take to brew a cup of coffee? 

 A: Brewing time should range from 2-4 minutes, but may be shorter depending on how much coffee you add and your stirring technique during the brewing process. 

Q: Can I put the Canadiano in the dishwasher?

 A: No 

Q: How do I use the Canadiano? 

A: 1. Put your Canadiano on top of a coffee cup. 

2. Use two table spoons of your preferred roast, we suggest using grinds prepared for metal filters, coarse ground, or #9 on a 1-10 scale.

3. Pour the ground coffee into the bowl to cover the metal filter. 

4. Boil a cup of water, pour the water slowly and evenly on the coffee. 

5. Wait for about 1 minute for the coffee to brew and stir a couple of times during this time. 

6. Stir your coffee a few more times and pour over more water if needed. 

7. The whole process should take between 2-4 minutes. 

8. Your brew is ready! 

9. Compost the grinds and rinse the Canadiano with warm water.

Q: How do I clean my Canadiano after I make a cup of coffee? 

 A: You can compost the used coffee grounds and rinse the Canadiano with warm water. You don't need to use dish-soap, just a simple rinse with warm water will make sure the bowl is clean. Over time the Canadiano will maintain itself as the natural oils from your preferred beans build up after each use. 

Q: What should I do if its taking longer than 4 minutes to filter through?

 A: Stir more often and adjust your grinds settings. We suggest starting with a coarse setting, something similar to french press and grinding finer one step at a time until you find your optimal settings based on your preferences. 

Q: What should I do if the coffee is not brewed enough or water goes through the filter quicker than usual? 

 A: Grind the coffee finer, compact the coffee before pouring hot water. Don't pour hot water straight in the middle, distribute evenly and start from the sides. stir regularly. 

 Q: Anything people with allergies should know? 

 A: We do not recommend Canadiano for people with nut allergies or any other specific allergies because the wood is finished with natural pure oils that contain edible nut oils.

HARIO POUR OVER COPPER KETTLE 

Q: How do I use the Hario Pour Over Copper Kettle?

A: The Hario kettle is for use on gas, electric, radiant or sheathead stovetops only.

To use, simply place the kettle on the stovetop, ensuring that the flame does not expand over the kettle and discolor the metal. Boil over low heat.

Always boil a full pot of water to prevent discoloration when heating, however, do not fill kettle with more than 0.7 L (3 cups) at a time. Overfilling the kettle can cause water to spill out, causing burns.

Q: How do I clean my kettle after I use it?

A: First, remove all stickers and labels, then thoroughly clean kettle before first use. Wash with a soft sponge and mild detergent to protect the clear-lacquered surface. Do not use cleaning agents containing chlorine. Over time, residue from tap water, such as magnesium and calcium, may build up to create white spots on the interior of your kettle. This is not harmful to your health. Always hand wash your kettle. Do not place in dishwasher. 


   

THE CHEMEX COFFEEMAKER 

Q: How do I use the Chemex Coffeemaker?

A: 1. Grind your favourite whole bean to a medium course ground. 

We suggest using a ceramic burr grinder such as the Rhinowares Handgrinder available at this store, because it delivers a more consistent particle size, allowing for a more even extraction and fuller bodied cup of coffee. 

2: Open a Chemex Bonded Coffee Filter (available at this store) into a cone shape so that one side of the cone has three layers, and place it into the top of the Chemex brewer. The thick three layer portion should cover the pouring spout.

3: Put one rounded table spoon of ground coffee for every cup into the filter cone. Use more if you prefer a stronger brew. The Chemex brewing process eliminates bitterness.

4: Once you have brought the appropriate amount of water to the boil, remove it from the heat and all it to stop boiling vigorously. Pour a small amount of water over the grounds to wet them, and wait 30 seconds to let them 'bloom'., releasing the most desirable coffee elements from the grounds.

5: Slowly pour the brewing water over the grounds while keeping the water level well below the top of the Chemex Coffeemaker. 

6: Slowly pour the remaining water over the grounds, using a circular or back and fourth motion as you pour to ensure an even soaking of the grounds.

7: Once the desired around of coffee is brewed, lift the filter out of the brewer and discard. We recommend composting your Chemex Filters. 

8: Pour your personalised brew into a warmed cup and indulge in the flavour. 

Q: How do I keep my Chemex brew warm? 

A: You can place the Chemex Coffeemaker on either a glass stove top or gas flame, both at low heat. If you have an electric coil stove top, you'll need to use a stainless steel wire grid between the Chemex and the coils to avoid breakage. Make sure there is a small amount of water in the carafe before placing it on a warm heating element. 

Q: How do I clean the Chemex Coffeemaker?

A: A carefully cleaned and handled Chemex Coffeemaker will give you a lifetime of service. Remove the wooden handle and continue to hand wash with warm water and a mild detergent. 

Q: Can I place the Chemex Coffeemaker in the dishwasher?

A: Yes. 

Q: What is the “natural” filter paper?

A: Cleansed through a four stage process using extremely hot water, the paper is 100% cellular fiber made of primarily softwood such as pine.

Q: Can I use drip grind?

A: Yes, but it will increase the amount of time it takes to make a pot of coffee. Best results will be obtained from regular grind.

Q: Can I use fine grind?

A: No, it will not work well with our filter. Chemex filters are heavy to filter out unwanted fats and oils. Fine grind coffee will slow the filtration process.

Q: How can I avoid bitter coffee?

A: If the water that comes into contact with the coffee grounds is too hot, you will extract bitter elements from the coffee. The water should not be boiling when poured on the coffee grounds. Coffee oils, fats and sediment are the natural parts of the coffee bean that causes bitterness by forming as the brew ages. The longer the coffee sits the stronger it tastes. (Actually it is more bitter, not stronger.)

Q: Can I reheat coffee brewed with a Chemex?

A: Chemex may be reheated without being bitter. Make sure that brewed coffee is stored in a sealed glass container. Exposure to air causes loss of taste.

Q: What advantages do Chemex filters offer?

A: Chemex filters are 20-30% heavier (more absorbent) to remove undesirable sediment particles and oils. Chemex filters were scientifically formulated to permit proper infusion time while filtering out sediment, oil, and fats. Infusion gives coffee a richer flavor and makes possible the fractional extraction of only the desirable parts of the coffee bean.

Q: What temperature should the water be when brewing?

A: The Chemex system was developed to provide the fractional extraction of only the desirable part of the coffee grounds.The coffee is brewed at and held at a temperature of between 80-95°C to avoid chemically altering the taste and making the coffee bitter.

Q: My Chemex coffeemaker takes too long to make the coffee.

A: There are a few unique factors to keep in mind when brewing coffee with a Chemex:

Make sure the three thickness of the filter are across the vent (if filter collapses into the vent it will slow or stop the coffee flow).

Use regular, medium, coarse grind coffee - finer grinds will slow filtration rate.

After soaking the grounds and allowing bloom time, pour water up to about 6mm from the top of glass. It does take 6 to 7 minutes to make a ten cup pot of Chemex Coffee, but there is just no such thing as an instant gourmet dinner - and no such thing as a good fast cup of coffee. We think better coffee is more important than fast coffee. Besides, from a coffee chemistry standpoint, proper brewing requires an infusion period - only Chemex properly provides this.

Q: What is the difference between Chemex and other automatic coffee makers?

A: There are three primary differences:

Glass versus plastic: All materials except glass will eventually corrode. That is why only glass beakers are used in laboratories. As most plastics age, tiny cracks will appear and they become resting places for mineral deposits or other things that are commonly present in water, especially tap water. These build-ups will eventually give your coffee a bad taste. Glass is the only non-porous material available so that these tiny cracks or fissures never appear in a Chemex coffeemaker no matter how many years it is used.

Filters: Most filters for automatic coffeemakers have a flat bottom which can cause non-uniform extraction of the desirable parts of the coffee bean. Again, in laboratory extraction techniques the filter is always cone shaped like Chemex Bonded filters to assure uniform extraction. The filters for automatics are lighter in weight which means there is more opportunity for fine particles to escape. Chemex filters are 20-30% heavier- eliminating all sediment.

Brewing time: Automatic coffee makers generally boast about how fast they brew coffee. This is the very fact that adversely affects the character of the coffee brew. After the coffee grounds are wet for the first time, there should be 20-30 second waiting period to give the cells of the coffee grounds an opportunity to open up or “bloom” in preparation for the fractional extraction of the desirable part of the bean. Most filters for automatics are really only strainers since the water passes through too quickly for proper infusion of the coffee flavor. In automatics, half of the coffee is brewed before all of the grounds are even damp- so a very large portion of the coffee is wasted. Chemex filters allow this infusion period so the coffee has a richer flavor but is never bitter.

A: Adjust your grind to the finest level (adjust so that the burrs are touching), then open up a notch or two.

Q: How do I clean the grinder, and how often should it be done?

A:  It's best to pull the grinder apart and give it a clean every 4 weeks (more often if you are using darker and more oily roasts.  Just use warm, soapy water and an old toothbrush to remove all residual coffee.  Be sure to rinse with fresh water when finished and to allow the parts to dry fully before re-assembling.

A: No, do not put the thermo flask in the dishwasher or plunge it into water.

A: We suggest cleaning the external wall with a wet tissue. Rinse the inner wall carefully. If a deposit appears, clean it with warm water and baking soda or vinegar. Do not use any abrasive material or substance  when cleaning the product.
